Silpancho Silpancho is a typical and popular Bolivian food from central Bolivia. The meal is served in layers. The base layer is rice, along with boiled and sliced potatoes. The next layer consists of a schnitzel-style boneless meat, fried after thinned with a meat tenderizer and coated with flour, beaten eggs and breadcrumbs. The top layer has chopped tomatoes, onions, beets and parsley. Silpancho can be found in "Trancapecho," a type of sandwich, with all the ingredients, even with rice and potatoes. [File photo]
