Recipe | Sambal Udang (Spicy Prawns)
Ingredients (serve 4 to 6):
500 g tiger or any medium-sized prawns
2 large brown onions
5 fresh red chili
10 small dried red chili
6 cloves garlic
3 tablespoon sugar
1 teaspoon salt
Oil for frying
Method:
1. Blend onions, garlic and chili together to a fine paste.
2. Place 3 tablespoons of oil in a non-stick frying pan and stir-fry the paste over medium fire until it turns dark and fragrant and the red oil seeps out of the paste.
3. Season with the sugar and salt.
4. Spoon up half the paste and set aside.
5. Add the prawns and cook over medium heat, adding about half a cup of water. When the sauce thickens and the prawns are firm and pink, remove from heat.
