Strawberry sable
It's a "snow-plus-frost" type of dessert, from Table No 1 by Jason Atherton. The strawberries are sourced daily from Qingpu, so famous as the best place in Shanghai for the fruit you could call it the Napa Valley of strawberries. Their sweet-sourness is intensified by the refreshing flavor of kumquat mandarin. It may not be the ultimate dessert to sate a desire for sweetness, but the perfect combination of the two fruits, together with the creme patissiere, is likely to whet your appetite for one more. 68 yuan (reservation required).
