Recipe | Hong Kong ham and luncheon meat noodles
Ingredients (serves 2):
2 packets instant noodles
2 eggs
4 slices luncheon meat
Method:
1. Boil the water and prepare the noodles according to packet instructions.
2. Heat a little oil in a non-stick pan and fry the eggs one by one, sunny side up. Tilt the pan so the eggs sit in a little more oil while they fry. If you do this, the egg whites will crisp at the edges better. Remove and set aside.
3. Fry the luncheon meat quickly in the same pan, flipping each slice after 40 seconds.
4. Divide the noodles into two bowls and place an egg, and two slices of luncheon meat on top.
