Winter beef consomme is a homemade broth containing chopped onion, carrot, celery, potatoes and a whole piece of tender beef brisket. The vegetables add depth of flavor and a healthy touch to the rich, satisfying soup.
The braised beef cheek is more complicated. Beef cheek and shallots are simmered for hours in port, and then served with sauteed vegetables and roasted baby potatoes with herbs.
The restaurant chain has also launched a new winter cocktail menu, which includes the restaurant's version of mulled wine, simmered with additions of orange peel, honey, cinnamon, cloves, brandy and star anise.
